CHOO CHEE CORAL TROUT

Ingredients:
500GMS Coral Trout Fillet- cubed evenly.
2 tablespoons of Sambal Olek paste.
1 tablespoon red curry paste
1 tablespoon vegetable oil
2 small red chillis sliced/ deseeded as desired.
1 small, diced onion.
2 garlic cloves finely chopped/grated.
6 lime leaves (fold along spine and finely slice)
300ml coconut milk
1 tablespoon fish sauce
1 tablespoon palm sugar
Naan Bread warmed for service.
Cucumber wedges for service.
Spring onions sliced diagonally to garnish.
Thai Basil or Coriander to garnish
Method:
Heat oil in frying pan large enough to accommodate all fillet in one layer, begin by heating Sambal Olek and curry paste until warm and fragrant @ 2minutes.
Stir in chili, lime leaves, onions and garlic heat through until onion is translucent and soft.
Add the coconut milk, sugar and stir to combine cook for 4 minutes.
Add the Coral Trout fillet to the pan and spoon sauce to cover. Simmer for 5 minutes, until your fish pieces are cooked through.
Garnish with spring onions and serve over steamed rice with warm Naan Bread and with cucumber wedges if desired.
