What's the Deal with Prawn Cocktails?

Before we get into the recipe, let's take a moment to appreciate the history of prawn cocktails. These bad boys became popular back in the 1960s and have been a staple at dinner parties ever since. But let's be honest, they needed a little sprucing up. That's where the modern twist comes in!

With an abundance of amazing fresh local Prawn available year-round, it is almost sinful not to give this a whirl!

 Ingredients:

Mayonnaise

1 large ripe avocado
½ lemon
5 tablespoons olive oil
3 tablespoons water
2 teaspoons tabasco/siracha
Salt and Pepper to taste

 Prawn Cocktail

2 gem lettuce shredded.
2 Pink Lady apples – 1 cubed and 1 sliced.
1 pomegranate- seeded.
1 bunch chopped coriander.
2 teaspoons cayenne pepper
400 grams Fresh Local Green Prawn Banana or Red Spot King
2 tablespoons grapeseed oil
½ lemon
Salt and Pepper to taste

Method:

To make the Avocado mayonnaise, put all the ingredients into a blender or processor and blend until smooth – thin to desired consistency with additional water.

Sprinkle your peeled, deveined prawns with cayenne, salt and pepper. Heat a non-stick pan and add the oil. Fry prawns for a minute or two on medium to high heat until just cooked. Squeeze the halved lemon over and set aside.

 Assembly:

*Reserve four prawn to crown your cocktail

Place a dollop of avocado mayonnaise in the base of a glass, followed by the gem lettuce. Top with the cubed apple, a pinch of coriander your cooked prawns, sprinkle with pomegranate seeds and some more shredded lettuce. To finish top with another spoon of avocado mayonnaise, adding a couple of apple slices and a prawn.
