We call these guys Chunky Monkeys, they are a very underrated reef fin fish.

The fillet is mild, slightly sweet flavour, low oiliness and moist, firm flesh with large flakes.

Cooking prep is minimal, lightly toss in seasoned flour and grill or shallow fry.
