We call these guys "Poor Mans Trout", they are a taste sensation.

Like Coral Trout they have the whitest of white fillet, but this fillet is banging full of sweet  flavour. 

The fillets hold together beautifully through the cooking process, which couldn't be easier - a light dusting in seasoned flour and you are ready to pan fry or grill.
